According to technological instructions, Salmon caviar is produced by standards in compliance with sanitary norms and rules approved in the prescribed manner. (4) Packed fine salted salmon caviar is stored in a refrigerator while maintaining a constant temperature of 21.8-24.8℉. Caviar is frozen using "shock therapy" technology at a temperature of 0.4℉, then stored in "shock" freezing chambers. The refrigerator is equipped with devices that record temperature and humidity. The batches of finished products are strictly separated from each other.
